Today is the UK’s general election, well technically it’ll be yesterday by the time I post this but let’s not get picky! I voted this morning, I would say I feel happy and proud to take part in democracy but mostly I’m just stressed and anxious! With the way the country is these days and the governments we’re offered, it doesn’t really feel like any vote is the right vote! But I have had my say and I just hope I don’t regret my decision. If a certain party get elected though I may very well move to France and live off pastries – sounds like a good plan whoever gets elected actually! I’m probably going to stay up and watch the results come in, I’ll be doing some live tweeting on my personal no doubt so just be glad you don’t follow that (if you want to feel free to ask, but I’ll warn you now – non baking me has some pretty strong, rambly opinions haha!)

Hallelujah! My internet is back! It was down for six whole days and what a dark and difficult time it was. All I can say is thank God for smart phones, I spent most of the time using my phone as a hotspot – which was especially useful since I work from home and can’t work without the internet. It didn’t eat through as much data as I thought it would and I get 20GB a month, so all in all I’m just being dramatic and it wasn’t really that hard haha! Still, it’s nice to have real internet back.

Raspberry Macarons by Giraffes Can Bake

What a week this has been! I’m still recovering from the hen party over the weekend, it was a lot of fun but very exhausting and if you follow me on instagram you will already seen the bruises I came back with! I’m also all full of cold, which is never any fun. And my internet has been down for the last 2 days – and won’t be fixed until Friday afternoon ๐Ÿ™ So I’m writing this post on Thursday on my phone, then I’m gonna use my phone to tether and format it all properly on my computer – that’s the plan anyway, fingers crossed it works! There is an upside to my net being down and that is I got a lot of spring cleaning done!

Frisky Summer Punch - a delicious fruit punch made with cucumber and apple bison grass vodka, prosecco and fruit. The perfect summer drink for parties, BBQ's and more. It's so quick and easy to make, you'll be making this punch all summer long!

What do you love about summer? Is it the (hopefully) sunny weather and heat, the longer days, family trips and get togethers, the smell of rain on the hot ground, water fights, barbecues, or all of the above and more? I’m not generally a fan of hot weather, I wilt like a flower in the heat but I do love almost everything else about summer. To me, summer means days and evenings spent outside enjoying all the beautiful flavours that come with summer, and sharing them with friends and family – because what could be better than that?

Mexican Nutella and Banana Empanadas

Flaky pie crust encases chili and cinnamon spiked Nutella and sweet bananas, baked with a sprinkling of cinnamon sugar. The perfect dessert or breakfast for Cinco De Mayo, or any time!

Mexican Nutella and Banana Empanadas

I’ve had a jar of Nutella in my kitchen for a couple of months now, waiting for inspiration to strike. The fact that it’s lasted that long is kind of a miracle, it’s not unknown for me to just eat Nutella with a spoon – but I resisted until I came up with something awesome to bake with it. Inspiration struck this morning when I realised I hadn’t baked anything for Cinco De Mayo yet, which is just unacceptable because Mexican food is far too delicious for me not to honor the holiday on my blog in the form of something sweet! I went through a couple of ideas before landing on empanadas, and then Nutella and banana seemed like the obvious choice of filling – to me anyway!
