It’s my birthday!! Yay! Today I turn 21 *ahem* plus 10 years *ahem*! 

I was not particularly thrilled about turning 30 last year, but this last year turned out to be pretty awesome. I started a new job, some really awesome new people came into my life, I moved to a really gorgeous area of London, and I’ve baked some delicious treats and mixed some amazing cocktails. That’s a pretty good year by my books!

I love Wales, it’s a beautiful country full of pretty awesome people (unless the rugby is on, then they’re my enemy!). I lived in Wales for four years, the beautiful sea-side town of Aberystwyth, I miss it a lot. One of the many amazing things to come out of Wales is Welsh cakes – they’re so simple, but oh so delicious. They’re thin, flat cakes that you cook on a griddle, full of dried fruit (usually raisins/sultanas) and mixed spices. I hate to think how many Welsh Cakes I got through in my four years in Aber, probably far too many. I’ve never made them myself though, I was always a bit intimidated by them – they’re a well loved, traditional treat in Wales, if you get them wrong you’re not forgiven!

Happy Birthday to meeeeee!! Yep, today is my birthday! It’s my 30th birthday in fact, the big 3-0! Happy Mother’s Day to all the mothers in the UK! Don’t panic my lovely US people, our Mother’s Day falls in a completely different month to yours. But in the UK, today is a day to celebrate the wonderful mothers, grandmothers and mother-figures in our lives – those wonderful women that support us, love us and care for us unconditionally. I consider myself extremely lucky to have an amazing mum who I would be lost without, so this recipe is dedicated to her and was made for her. Because is there a better way to say “Thank you” than delicious cupcakes? Perhaps cupcakes topped with frosting flavoured with her favourite bubbly!

These Snickers Cookies are like the ultimate antidote to a wet and dreary Sunday evening, they’re so ridiculously yummy that you won’t care that you have to get up early tomorrow morning for work, just get lost in the sheer deliciousness of these Snickers Cookies and feel all your blues melt away!
