Being a food blogger is hard work. There’s the recipe planing, the recipe testing, the photographing, editing the photos, writing the post. A lot goes into these humble little posts. But I think the hardest part is coming up with the recipe name! Especially for something as over the top as these beauties! I mean, if it’s a vanilla cake with chocolate frosting, that’s easy. But when so many layers make up the final product, each as delicious as the next, how do you decide on a name that does it justice and really tells your readers what they’re in for, without writing an essay as a title? I swear, naming a child would be easier sometimes.  Hopefully my final recipe title has captured the deliciousness of these cookie dough brownie bombs that I’m about to share with you!

Happy Monday! I can say that with sincerity too, because how can you have the Monday blues when something as delicious as these Banana and Salted Caramel Banofee Galettes exist and you literally have the recipe at your finger tips? It’s also the second installment of Yum of the Month, so I’m in a pretty good mood! The theme this month is, you guessed, it galettes! A Galette is basically a free form pie, all the goodness of pie without the need for a dish – you just roll the pastry out, pile on your filling and then fold the edges over. It creates an easy, rustic looking pie. Totally cute and totally delicious – I love them! How about you?

Coffee and butterscotch might seem like a somewhat odd combination when you first see it, but just think about it – the deep, richly bitter flavour of espresso combined with the rich, buttery, caramelly goodness of butterscotch? Starting to sound irresistable now? Trust me, it is! I first tried this combination in a milkshake from Ed’s Diners (it’s an American themed diner here in the UK, they’re pretty good) and you can combine any flavours together and one day I went with coffee and butterscotch – and boy am I glad I did! You guys, it’s sooooo good! I KNEW I needed to bake that drool worthy combo together ASAP. I circled through a lot of ideas before finally landing on these amazing Espresso and Butterscotch Viennese Whirls!

I love Wales, it’s a beautiful country full of pretty awesome people (unless the rugby is on, then they’re my enemy!). I lived in Wales for four years, the beautiful sea-side town of Aberystwyth, I miss it a lot. One of the many amazing things to come out of Wales is Welsh cakes – they’re so simple, but oh so delicious. They’re thin, flat cakes that you cook on a griddle, full of dried fruit (usually raisins/sultanas) and mixed spices. I hate to think how many Welsh Cakes I got through in my four years in Aber, probably far too many. I’ve never made them myself though, I was always a bit intimidated by them – they’re a well loved, traditional treat in Wales, if you get them wrong you’re not forgiven!
