Coffee and butterscotch might seem like a somewhat odd combination when you first see it, but just think about it – the deep, richly bitter flavour of espresso combined with the rich, buttery, caramelly goodness of butterscotch? Starting to sound irresistable now? Trust me, it is! I first tried this combination in a milkshake from Ed’s Diners (it’s an American themed diner here in the UK, they’re pretty good) and you can combine any flavours together and one day I went with coffee and butterscotch – and boy am I glad I did! You guys, it’s sooooo good! I KNEW I needed to bake that drool worthy combo together ASAP. I circled through a lot of ideas before finally landing on these amazing Espresso and Butterscotch Viennese Whirls!

Have you guys been watching Daredevil? If not, you need to, now! It’s sooooo good! It is a Netflix show, but honestly it’s worth signing up for it just for that show. You don’t just have to take my word for it, the whole world seems to be raving about it right now, and for good reason! I’m not talking about this because my blog has suddenly become a bad TV review blog, but because it explains why I have only just finished editing the photos for this post… at almost 1am! I sit at my computer and I think “I should edit those photos…. or I could watch another episode of Daredevil!”, and as you can guess Matt Murdoch has been winning! I’ve only got a couple episodes left to watch though so here I am, edited photos and all!

Butterscotch Pudding Cookies

Butterscotch Pudding Cookies

It’s no secret that I love pudding cookies, so when I was deciding what to bake to take to my work’s away day – pudding cookies were at the top of my list. I just love how soft and flavourful they are, it’s the perfect kind of cookie. And they’re so versatile, you can do pretty much whatever you like with them. I work from home and although I’ve worked for this company for over a year, I had never met any of my colleagues in person before this away day. They always get mad at me for posting photos of the things I bake when they can’t try any, so I knew I had to come out with guns blazing for them! I’d recently returned from my trip to Atlanta armed with many boxes of instant pudding and one of the flavours I had was butterscotch, I also had some butterscotch chips. I adore butterscotch and I decided this could make an amazing cookie flavour – I was not wrong.
