Mexican Nutella and Banana Empanadas

Flaky pie crust encases chili and cinnamon spiked Nutella and sweet bananas, baked with a sprinkling of cinnamon sugar. The perfect dessert or breakfast for Cinco De Mayo, or any time!

Mexican Nutella and Banana Empanadas

I’ve had a jar of Nutella in my kitchen for a couple of months now, waiting for inspiration to strike. The fact that it’s lasted that long is kind of a miracle, it’s not unknown for me to just eat Nutella with a spoon – but I resisted until I came up with something awesome to bake with it. Inspiration struck this morning when I realised I hadn’t baked anything for Cinco De Mayo yet, which is just unacceptable because Mexican food is far too delicious for me not to honor the holiday on my blog in the form of something sweet! I went through a couple of ideas before landing on empanadas, and then Nutella and banana seemed like the obvious choice of filling – to me anyway!

Chocolate Butterscotch Cheesecake

Have you guys been watching Daredevil? If not, you need to, now! It’s sooooo good! It is a Netflix show, but honestly it’s worth signing up for it just for that show. You don’t just have to take my word for it, the whole world seems to be raving about it right now, and for good reason! I’m not talking about this because my blog has suddenly become a bad TV review blog, but because it explains why I have only just finished editing the photos for this post… at almost 1am! I sit at my computer and I think “I should edit those photos…. or I could watch another episode of Daredevil!”, and as you can guess Matt Murdoch has been winning! I’ve only got a couple episodes left to watch though so here I am, edited photos and all!

Spring is here! I don’t know about the rest of the world but it’s been absolutely gorgeous here in the UK, we had one day of grey weather but the rest of the last week has been beautifully sunny! It’s been cold and windy some days, but as long as the sun is out I’m happy! Today is gonna be an absolute scorcher though and I’m not too fond of that, I wilt like a flower in the heat! Of course, my idea of too hot is probably a nice, mild day for lots of people!

Let’s talk about pudding again, shall we? I’ve talked before about how in Britain the term “pudding” means any kind of dessert, well we also have a type of pudding called pudding – because why keep things simple and easy to understand! This type of pudding is generally sponge based and usually steamed, there’s lots of different types including the ever giggle inducing spotted dick and well known Christmas pudding! Sticky toffee pudding is probably one of the most loved though, it’s hard to resist that deep toffee flavour and gooey, sticky sauce it’s covered in!

 profiteroles with warm chocolate sauce

Oh profiteroles, so delicious yet so misunderstood! Profiteroles with warm chocolate sauce are one of my absolute favourite desserts but they get a bit of a bad rap because they’re considered “too 70’s”. Lots of good things came out of the 70’s – Abba! Okay bad example, I hate Abba… um, Disco? Okay, you’ve caught me, my 70’s knowledge isn’t very good, in my defence I was born in the 80’s! All that really matters though is profiteroles were popular in the 70’s and profiteroles are awesome, so that makes the 70’s awesome in my book!
