I think I outdid myself on over-the-top dessert you guys. I didn’t think I could out do my Chocolate Chip Cookie Ultimate Layer Cake, yet here I am with a big chocolate egg spilling creme egg filling all over a fudgy brownie sitting in a nest of cadbury flakes! But this Easter weekend almost falls on my 30th birthday, so I figured I should go a bit crazy with it! Maybe we can call this cake my pre-midlife crisis!

Happy Mother’s Day to all the mothers in the UK! Don’t panic my lovely US people, our Mother’s Day falls in a completely different month to yours. But in the UK, today is a day to celebrate the wonderful mothers, grandmothers and mother-figures in our lives – those wonderful women that support us, love us and care for us unconditionally. I consider myself extremely lucky to have an amazing mum who I would be lost without, so this recipe is dedicated to her and was made for her. Because is there a better way to say “Thank you” than delicious cupcakes? Perhaps cupcakes topped with frosting flavoured with her favourite bubbly!

At the beginning of this month the blogging world lost a little of it’s brightness, Selma from Selma’s Table passed away and left a big hole in our world. She was not only a skilled chef and writer, but also a supportive and cherished friend to so many. I always looked forward to reading her blog and was so happy to see her comments pop up on my posts, always so encouraging and kind! I can’t imagine the loss that her son, her family and her friends are feeling at this time and my thoughts go out to them every day. I will always miss her presence in my blogging life and regret that I was never able to meet her in person, but her generous nature and spirit will always be present here. 

Selma was one of the most active and enthusiastic members of Fiesta Friday, so it was only right for her memory to be honored with a very special Fiesta Friday, one that will always be hers! Here we are sharing posts dedicated to this wonderful woman that touched so many of us. This is mine.

Chocolate Coconut Cupcakes - a Bounty/Mound bar in cupcake form!

So, Avengers: Age of Ultron was released in the UK this week. I went to the midnight premier on Wednesday night because I’m a nerd like that and I hate waiting! I’m not going to give you any spoilers don’t worry, I know it’s not released in the US until next week. I was a bit underwhelmed by it though if I’m being honest, but there were lots of awesome parts. All I’ll say though is I’m so glad that was Joss Whedon’s last MCU movie, I love his TV work but he cannot write Marvel, he ruins it! Bring on the Russos and Civil War (although I’m still mad that they’re doing that!). Who else has seen it? Or is planning on seeing it? Do let me know your thoughts!

Elvis Cake

It’s my birthday! As I said before, I’m not big on birthdays, but that doesn’t mean I don’t want an awesome birthday cake! That’s the best part about birthdays any, a great reason to eat as much cake as you like! I’m eating a slice right now in fact, I only got up 30 minutes ago but it’s my birthday so I’m allowed!
