Pumpkin Pie Ice Cream - No ice cream machine needed!

I have been wanting to make ice cream for a long time but I don’t have an ice cream machine. Ice cream is pretty much my favourite food in the world! Finally I just went for it, ice cream maker be damned (I’m a rebel, I know) and it was the best decision ever. This ice cream is creamy and oh so tasty, I’ll be having dreams about it for years to come! And not only does it not require an ice cream machine, it only takes about 5 minutes to put together (not including freezing time, of course, that would be insane!). A big shout out to all the (what felt like) hundreds of ice cream recipes I looked at online trying to figure out the best way to make ice cream at home!

Butterscotch Pudding Cookies

Butterscotch Pudding Cookies

It’s no secret that I love pudding cookies, so when I was deciding what to bake to take to my work’s away day – pudding cookies were at the top of my list. I just love how soft and flavourful they are, it’s the perfect kind of cookie. And they’re so versatile, you can do pretty much whatever you like with them. I work from home and although I’ve worked for this company for over a year, I had never met any of my colleagues in person before this away day. They always get mad at me for posting photos of the things I bake when they can’t try any, so I knew I had to come out with guns blazing for them! I’d recently returned from my trip to Atlanta armed with many boxes of instant pudding and one of the flavours I had was butterscotch, I also had some butterscotch chips. I adore butterscotch and I decided this could make an amazing cookie flavour – I was not wrong.

Monkey Bread – GBBO Challenge Week 3 (Bread week)

Monkey Bread Aka pull apart brown sugar cinnamon bread! monkey bread

If you’ve never had monkey bread before, it’s gooey sticky balls of sweet, cinnamon bread topped with a sweet vanilla glaze. It’s basically like a mountain of cinnamon buns! And if that doesn’t make you drool, I don’t know what will. The dough is made from scratch and it’s definitely worth doing that way, it doesn’t take all that long and you won’t get fluffy, yummy results as good as this without it!  monkey bread

Can you say yum!

I’m slightly cheating with this week’s post as I didn’t technically make these! My friend Kathleen wanted to bake with me one night, so she made these wonderful creations while I supervised and talked her through it. It is my recipe though, so I did some of the work at least! And now Kathleen isn’t able to claim she can’t bake because these brownies were amazing – they were super gooey and fudgey, crinkly on top and oozing with an Andes mints fondant type filling.

Kale and Black Bean Salad with Avocado Lime Dressing

This Kale and Black Bean Salad with Avocado Lime Dressing is the first of my non-baking posts. I’m going to be doing these at least once a month to encourage myself to cook more and also share some of the yummy non-baked things I make! I’d like to apologise in advance for the terrible photos these posts will have, while I have been improving my baking photography it seems I have a lot further to go with general food photography!

This salad is a favourite for me and the best friend, it’s simple to make, super tasty and healthy too! What’s not to love. You can mix it up with your favourite veggies to customise it your personal tastes.

The dressing is nice and creamy, which is great for raw kale as it helps break it down – raw kale is a favourite of mine but it can be pretty tough, I normally toss it in lime juice which makes it extra tasty and helps break it down. This dressing has the benefits of the lime juice and the thickness to make the kale more palatable as a salad.
