Jam, jelly, preserves, whatever you want to call them – jam making is a delicious skill to have under your belt! And it’s a skill that’s really easy to master! I love jam, there’s so many different ways you can use it, but it’s something I thought was really hard or awkward to make. I have made a jam once before, a fig jam, and it was delicious, but I wouldn’t consider it real jam – it’s more of a thick fig sauce I guess. This Spicy Mango Jam is my first real jam, and it was a big success!

 I think it’s fairly obvious that I love to bake! I definitely get the appeal of a no bake dessert, they’re usually easy to prepare and it’s great to not have to turn the oven on when it’s hot out – plus, they can be delicious! But, I usually prefer the baked alternative – there’s just usually an extra depth of flavour you can’t seem to replicate in a “no bake” version. Cheesecake is the best example of this, while no bake cheesecakes can indeed be yummy, you’ll never beat a baked one as far as I’m concerned. So why, you ask, do I have a no bake dessert for you today? For the same reasons they’re so popular, it’s really easy to whip up, with the day’s heating up you don’t want the oven on all the time and it is amazingly tasty!

I started my last post talking about how time seems to slip me by and it looks like I’m starting this one off the same way, at least I’m consistent! This post almost didn’t happen, because I did not realise how late into the week we are – it’s Friday apparently?! Did everybody realise this?! Has somebody alerted the PM? (On second thoughts don’t, he’ll probably impose a time tax) It’s actually currently Thursday as I write this, 11:30pm on Thursday – oops! I’ve been baking all evening in the kitchen (where else would you be baking, Michelle?!) and I finally sat down, ready to catch up on some blog reading before I go to bed when it hit me that tomorrow (now today) would be Friday and I hadn’t even started on a post! Luckily I had at least edited the photos, so it’s just the actual writing I have to do. Please tell me I’m not the only one who finds themselves this unorganised on a frequent basis? Lie to me if you have to!

Do you ever feel like as you get older, time moves much faster? I’m not sure how that’s possible physics wise, but I’m pretty sure it’s true! Either way, I’m using it as an excuse as to why I’m so unorganised at the moment! May has only just started and it’s already passing me by way too quickly, I have a big pile of things to do that isn’t getting any shorter! At least I can now check off writing this post from the list… assuming I finish this, which I do! I have at least that much faith in myself. This is a recipe that shouldn’t have been made to wait either, so I formally apologise to both this Mojito Ice Cream Sundae and you guys!

Today is the UK’s general election, well technically it’ll be yesterday by the time I post this but let’s not get picky! I voted this morning, I would say I feel happy and proud to take part in democracy but mostly I’m just stressed and anxious! With the way the country is these days and the governments we’re offered, it doesn’t really feel like any vote is the right vote! But I have had my say and I just hope I don’t regret my decision. If a certain party get elected though I may very well move to France and live off pastries – sounds like a good plan whoever gets elected actually! I’m probably going to stay up and watch the results come in, I’ll be doing some live tweeting on my personal no doubt so just be glad you don’t follow that (if you want to feel free to ask, but I’ll warn you now – non baking me has some pretty strong, rambly opinions haha!)
