Love is taking over Giraffes Can Bake at the moment, and I am a-okay with that! Valentine’s Day seems to be a bit of a marmite holiday, and I am one of the lovers! Sure, you could say it’s a commercial holiday exploited by Hallmark and chocolate companies but it’s also about love, and what’s wrong with that? A day to celebrate love, in all forms, is a day I’m a fan of. You don’t need to buy into the commercial side of it to celebrate love. And in this often scary and sad world, I think we all need a day where we take that extra step to tell the people we care about that we love them and wouldn’t be about them. So yes, I am firmly in the pro-Valentine’s Day camp.

Muffins are usually my treat of choice when visiting a bakery, they just look so inviting towering over everything else, and there’s just something about a bakery muffin that is so delicious! Well, I’m here to help you recreate that amazing flavour and those sky high muffins at home, with just a wooden spoon, some mixing bowls and some every day, not-so-secret ingredients and methods. Not all heroes wear capes, some of us wear aprons 😉 In all seriousness though, these bakery style jumbo muffins are absolutely scrummy and totally customisable to whatever flavour your heart desires.
A rich, decadent chocolate tart with fresh strawberries, boozy strawberry jam and an oreo crust. So easy to make, this No Bake Strawberry and Chocolate Boozy Tart is the perfect dessert to serve on a nice summer’s day!
I think it’s fairly obvious that I love to bake! I definitely get the appeal of a no bake dessert, they’re usually easy to prepare and it’s great to not have to turn the oven on when it’s hot out – plus, they can be delicious! But, I usually prefer the baked alternative – there’s just usually an extra depth of flavour you can’t seem to replicate in a “no bake” version. Cheesecake is the best example of this, while no bake cheesecakes can indeed be yummy, you’ll never beat a baked one as far as I’m concerned. So why, you ask, do I have a no bake dessert for you today? For the same reasons they’re so popular, it’s really easy to whip up, with the day’s heating up you don’t want the oven on all the time and it is amazingly tasty!
Buttery, flaky pie crust with a sweet and spicy cheesecake filling! Dessert empanadas are easy to make and so delicious, everyone will love them!
I love going into the town centre around the end of the week because it’s when all the market stalls are there, with lots of fresh fruit and vegetables for way cheaper than at the supermarket, and much better quality too. They also have stalls with all kinds of other things, but I don’t usually pay much attention to them. However, last month I was there and a jam and preserves stall caught my eye and I had to go have a little look. All the jams looked so yummy and I was very intrigued by some of the flavours. After a lovely conversation with the lady that runs the stall and sampling lots of delicious jams, I came away with two pots of strawberry and chili jam. Thanks Poppy’s Preserves (I did ask for a website or facebook to link to but she doesn’t have one unfortunately).
