So, if you follow me on any kind of social media you may have realised that the Rugby World Cup is currently underway and I’m a big England supporter! Last weekend we had a crushing defeat against Wales (we only lost by three points, but losing to Wales is the worst thing that can happen to us!) so I’ve been kinda bummed all week! Tomorrow we play Australia, it’s really important that we win this one and score a lot of points, so I’m pulling out all the stops in my support – including creating a special dessert recipe in support of England Rugby. And so this incredible dessert was born –  Blackberry & Lemon Eton Mess!

They always say that you should go grocery shopping with a list and stick to it (only deviating for a better deal on something you need), and for budget purposes that’s definitely a good idea! I don’t know who “they” are, but they’d probably be very disappointed with my shopping habits! I definitely go with a list in mind, but I usually get distracted by offers and random products, I usually end up coming home with a lot of things I never planned to buy. And while that may not be too kind of my bank balance, it does usually end up producing yummy recipes! This rice pudding is one of those times – I was shopping in Aldi and saw pudding rice and thought to myself “hmm I should make rice pudding soon” so I put a bag in my trolley! That pudding rice proceeded to sit in my cupboard for months, unopened – until it eventually met it’s destiny in the form of this delicious Spicy Mango Layered Rice Pudding!

Ah, another week and what d’ya know? I’m running behind again! With how often I run behind I might as well call it on schedule! I usually write my Friday post on Thursday and, well, it got to Thursday night and I hadn’t even started editing the photos for the post, oops! Strawberry and Chili Cheesecake Empanadas

Buttery, flaky pie crust with a sweet and spicy cheesecake filling! Dessert empanadas are easy to make and so delicious, everyone will love them!

I love going into the town centre around the end of the week because it’s when all the market stalls are there, with lots of fresh fruit and vegetables for way cheaper than at the supermarket, and much better quality too. They also have stalls with all kinds of other things, but I don’t usually pay much attention to them. However, last month I was there and a jam and preserves stall caught my eye and I had to go have a little look. All the jams looked so yummy and I was very intrigued by some of the flavours. After a lovely conversation with the lady that runs the stall and sampling lots of delicious jams, I came away with two pots of strawberry and chili jam. Thanks Poppy’s Preserves (I did ask for a website or facebook to link to but she doesn’t have one unfortunately).

Do you ever feel like as you get older, time moves much faster? I’m not sure how that’s possible physics wise, but I’m pretty sure it’s true! Either way, I’m using it as an excuse as to why I’m so unorganised at the moment! May has only just started and it’s already passing me by way too quickly, I have a big pile of things to do that isn’t getting any shorter! At least I can now check off writing this post from the list… assuming I finish this, which I do! I have at least that much faith in myself. This is a recipe that shouldn’t have been made to wait either, so I formally apologise to both this Mojito Ice Cream Sundae and you guys!
