Do you ever feel like you’re constantly playing catch up and never on top of your to-do list? That’s pretty much a constant state for me, but lately it seems to be getting worse! Even with some time off work recently and quite a few four day weeks (yay for bank holidays!), I just feel like I never have enough time to get things done for the blog. On top of all the recipe development, baking, photography and writing, there always seems to be something new to add to the list for the behind-the-scenes stuff – I think I need a personal assistant whose only job is to kick me up the butt to get going with these things! Any takers?! Don’t get me wrong, I’m not really complaining, I love doing the blog, it’s just hard to stay on top of everything! I’m sure I’m not the only one who feels like this, whether it’s in regards to blogging, work life, home life, all of the above! There’s just never enough  hours in the day, is there?

I’m really not a fan of holidays that change date each year, y’know why? Because I am a disorganised mess and I forget it about. So yup, I have left my Easter recipe until the last minute! I know, I know, I can’t really blame the change of date since it’s not exactly a secret. I mean, in theory we can know every Easter until the end of time – for example, did you know that Easter Sunday in the year 2100 will be on March 28th ? – mark your calendars now! Yet, I am using the changing date of Easter each year as an excuse for why I am posting my Easter treat recipe with less than two weeks to go – and I’m sticking to it!

It’s my birthday!! Yay! Today I turn 21 *ahem* plus 10 years *ahem*! 

I was not particularly thrilled about turning 30 last year, but this last year turned out to be pretty awesome. I started a new job, some really awesome new people came into my life, I moved to a really gorgeous area of London, and I’ve baked some delicious treats and mixed some amazing cocktails. That’s a pretty good year by my books!

I’ve already shared the amazing Champagne Cocktail that I made for her, and now it’s time for the shortbread to take the spotlight. I got the inspiration for these Jam Shortbread Cookie Bars when I was in Tesco, lusting over a packet of Jammie Dodgers – a classic British biscuit (*ahem* cookie) that is jam sandwiched between shortbread! I’ve made my own homemade version of Jammie Dodgers before, which are so good, but I took the idea to the next level with these Jam Shortbread Cookie Bars.

Pancake Day, Shrove Tuesday, Mardi Gras… whatever you call it, it’s a day celebrated and marked across the world. It comes the day before Ash Wednesday, the day that Lent starts, and this year it falls in February 28th – this coming Tuesday. Traditionally it’s the day you get ready for fasting by using up all your staples in your kitchen and one last chance to gorge on what you will be giving up for Lent. In the UK, we traditionally have pancakes because it’s a simple way to use up eggs, flour and sugar – hence why we call it “Pancake Day”. Of course, it’s not entirely necessary these days as most people don’t fully fast for Lent, rather we just give up one of our vices, but traditions are still fun to have right?
