When I asked my mum what she wanted me to make for Mother’s Day her first answer was shortbread (I’ll be sharing how I obliged with that request very soon) and the second was a cocktail. As my chief taste tester, she’s always very happy when I put mixologist hat on – I mean, who doesn’t love testing new cocktail creations? For her Mother’s Day cocktail I knew I wanted some bright, spring flavours and colours, along with some bubbly – because what’s a celebration without bubbly? Our usual go-to bubbly is Prosecco, because it’s delicious and you don’t have to spend a fortune to get a decent bottle. I went with champagne for this Mother’s Day Raspberry Peach Champagne Cocktail however, because I wanted it to be extra special. However, if like me, your champagne tastes are pretty pricey, you can always substitute with Cava – Champagne’s Spanish cousin, you can get a nice tasting bottle (in my humble, non-sommelier, opinion) for much cheaper than a bottle of champers!

I wanted to keep this Raspberry Peach Champagne Cocktail relatively simple, but with lots of flavour. It’s flavoured with a really easy raspberry simple syrup (honestly, if you’ve never made your own simple syrup before you’re gonna love how quick and simple it is to do), with added peach bitters. I bought a set of bitters recently, and I have been having so much fun playing with them. If you’re not the kind of person who keeps peach bitters hanging around, it’s okay, you can get the peach flavour with fresh peach juice, it’s all good. However, if you love a bit of cocktail mixing and love playing with new flavours, I cannot recommend stocking up on a set of bitters – these are the ones I recently bought {affiliate link}. They seem pricey for the amount you get I know, but since you only need a couple dashes to infuse flavour they last a very long time! And they’re not just for cocktails, you can add some to soda water for a flavourful drink without mass amounts of sugar, they’re great to add to baking and cooking too. And no, this is not a sponsored post for bitters, I just like them a lot! Moving on…
The peach flavour also comes from the peach vodka. My younger sister bought me a bottle of locally homemade peach vodka for Christmas and I’ve been waiting for inspiration to strike for how to use it, and here it is! I love infused vodkas because it’s a more subtle flavour, with a lot of depth to it. Again, I want everybody to be able to make this amazing Raspberry Peach Champagne Cocktail, so if you don’t have access to peach vodka don’t fret, I’ll be putting a little note in the recipe for a substitute. You can also make your own peach vodka really easily, just slice up peaches (enough to pack the size of jar you’re using) and fill up with vodka, leave to steep for a week and then strain. Easy and delicious!
For those of us in the UK, Mother’s Day will be with us in a couple of weeks (don’t panic America, you guys have until May). When creating recipes for the blog I always keep you guys in mind and think about what you might like to see. But when it comes to Mother’s Day, it’s all about what my mum likes and would want. Last year I made Orange Raspberry Cupcakes with Prosecco Buttercream Frosting because she always loves my cupcakes and she loves a drop of Prosecco. This year, as I said, she requested shortbread and a cocktail. She loved them both and I will be re-making them both on the actual day for her (and sharing the shortbread recipe with you ASAP). So, on that basis alone, my Mother’s Day recipes have been a big success.
Of course, I do hope that the love and thought I put into this Raspberry Peach Champagne Cocktail (and the forthcoming shortbread) resonates with you and you love making and drinking it as much as we did! After all, while it was created especially with my mum in mind, I think this special Champagne Cocktail has such a wonderful flavour and looks so beautiful, you don’t need to my mum to really fall in love with it. I also hope that it will be very well received and loved if you decide to make it for the special Mother figure in your life.
What I love about this lovely Champagne Cocktail is it’s pretty versatile. While it was created with Mother’s Day in mind, it will be wonderful to serve and enjoy at any special occasion or gathering. The fruity bubbles make it the perfect brunch cocktail, but equally it will go down great as a pre-dinner cocktail or a catch up with the girls. The recipe is so simple, meaning it’s easy to whip up as many as you need or want. 1 bottle of champagne makes four generous sized cocktails, so it’s easy to plan your supplies shopping list. The Raspberry Simple Syrup recipe makes approximately 1.25 cups (300ml), and while you can easily scale it down to make less syrup I totally recommend making the full batch (you’ll use 3/4 cup (180ml) for the cocktails). It’s not only great for cocktails, this Champagne Cocktail and others, it has so many other yummy uses too – you can flavour soda water with it, sweeten iced tea with it, pour it over pancakes or waffles, glaze cakes with it, drizzle it over ice cream, the possibilities are almost endless! It keeps in the fridge for two weeks too, so you have plenty of time to use it up!

Ingredients
For the Raspberry Syrup (makes 1 1/4 cups/300ml) :
- 1 cup (200g) white sugar
- 1 cup (240ml) water
- 1 cup (125g) raspberries
- 10 dashes peach bitters (optional)
For the Champagne Cocktail:
- 1 oz peach vodka (see notes if you don't have peach vodka)
- 3/4 cup (180ml) raspberry syrup
- 1 bottle of chilled champagne
- Raspberries to serve
Instructions
To make the raspberry syrup:
- Put the sugar, water and raspberries in a small saucepan and bring to a boil on a medium heat.
- One boiling, reduce to a simmer and simmer for 10 minutes. Stirring occasionally.
- Remove from the heat and add the bitters, stir. Transfer to a jar or bottle and leave to cool. Can be stored in a sealed jar/bottle for up to 2 weeks in the fridge
To make the cocktail:
- Set out 4 champagne coupe glasses (if using flutes, please see note)
- Add 1/4 oz peach vodka to each glass
- Add 1.5 oz/3 tbsp/45ml raspberry syrup to each glass
- Top up with champagne
- Add fresh raspberries to each glass
- Serve straight away
Notes
If you do not have peach vodka, you can use regular vodka and add 1.5 oz/3 tbsp/45 ml peach nectar or juice (here's a post on how to easily make peach nectar/juice at home if you can't find it in the store).
This recipe makes 4 x 300ml (1.25 cups) cocktails served in a champagne coupe/saucer glass. If you would prefer to use flutes, you will make a much smaller cocktail but a higher number - measurements of ingredients added should be scaled down accordingly. As a guide, it should be approximately 2 parts champagne to 1 part vodka and syrup combined.

Aww thank you, Jane! My fingers are so un-green they’re red haha! I was aiming for cherry blossoms but not 100% sure if that’s what I got, they’re artificial flowers from Wilkos – whatever they’re so supposed to be, I thought they were very pretty!
