I love Wales, it’s a beautiful country full of pretty awesome people (unless the rugby is on, then they’re my enemy!). I lived in Wales for four years, the beautiful sea-side town of Aberystwyth, I miss it a lot. One of the many amazing things to come out of Wales is Welsh cakes – they’re so simple, but oh so delicious. They’re thin, flat cakes that you cook on a griddle, full of dried fruit (usually raisins/sultanas) and mixed spices. I hate to think how many Welsh Cakes I got through in my four years in Aber, probably far too many. I’ve never made them myself though, I was always a bit intimidated by them – they’re a well loved, traditional treat in Wales, if you get them wrong you’re not forgiven!

Happy Birthday to meeeeee!! Yep, today is my birthday! It’s my 30th birthday in fact, the big 3-0! And in an attempt to deny the fact I’m getting old I decided to make myself an OTT birthday cake that any kid would love – it’s Willy Wonka meets Dr Seuss meets Deliciousness! Because even though I may now be 30, it doesn’t mean I have to act it!
A fudgy brownie cake smothered in rich chocolate ganache, in a Cadbury Flake nest. With a cracked Chocolate Egg covering the whole thing in creme egg filling! Ridiculously decadent, amazingly tasty and surprisingly simple!
I think I outdid myself on over-the-top dessert you guys. I didn’t think I could out do my Chocolate Chip Cookie Ultimate Layer Cake, yet here I am with a big chocolate egg spilling creme egg filling all over a fudgy brownie sitting in a nest of cadbury flakes! But this Easter weekend almost falls on my 30th birthday, so I figured I should go a bit crazy with it! Maybe we can call this cake my pre-midlife crisis!
Your favourite Easter chocolate as you’ve never seen it before! Cadbury Creme Eggs covered in a crispy, fluffy Vanilla batter and deep fried to gooey, yummy perfection. A sinful treat that should be wrong, but tastes so right!
I know what you’re thinking, deep frying chocolate is an abomination, it shouldn’t be done and I’m messing with the laws of physics and biology. But OMG! It’s so ridiculously good, it shouldn’t be, but it really is! You’re gonna have to trust me on this one, try it and you’ll see what I mean. So, won’t you join me in this godless adventure? Happy Mother’s Day to all the mothers in the UK! Don’t panic my lovely US people, our Mother’s Day falls in a completely different month to yours. But in the UK, today is a day to celebrate the wonderful mothers, grandmothers and mother-figures in our lives – those wonderful women that support us, love us and care for us unconditionally. I consider myself extremely lucky to have an amazing mum who I would be lost without, so this recipe is dedicated to her and was made for her. Because is there a better way to say “Thank you” than delicious cupcakes? Perhaps cupcakes topped with frosting flavoured with her favourite bubbly!
