Today is the UK’s general election, well technically it’ll be yesterday by the time I post this but let’s not get picky! I voted this morning, I would say I feel happy and proud to take part in democracy but mostly I’m just stressed and anxious! With the way the country is these days and the governments we’re offered, it doesn’t really feel like any vote is the right vote! But I have had my say and I just hope I don’t regret my decision. If a certain party get elected though I may very well move to France and live off pastries – sounds like a good plan whoever gets elected actually! I’m probably going to stay up and watch the results come in, I’ll be doing some live tweeting on my personal no doubt so just be glad you don’t follow that (if you want to feel free to ask, but I’ll warn you now – non baking me has some pretty strong, rambly opinions haha!)

Hallelujah! My internet is back! It was down for six whole days and what a dark and difficult time it was. All I can say is thank God for smart phones, I spent most of the time using my phone as a hotspot – which was especially useful since I work from home and can’t work without the internet. It didn’t eat through as much data as I thought it would and I get 20GB a month, so all in all I’m just being dramatic and it wasn’t really that hard haha! Still, it’s nice to have real internet back.

Mexican Nutella and Banana Empanadas

Mexican Nutella and Banana Empanadas

I’ve had a jar of Nutella in my kitchen for a couple of months now, waiting for inspiration to strike. The fact that it’s lasted that long is kind of a miracle, it’s not unknown for me to just eat Nutella with a spoon – but I resisted until I came up with something awesome to bake with it. Inspiration struck this morning when I realised I hadn’t baked anything for Cinco De Mayo yet, which is just unacceptable because Mexican food is far too delicious for me not to honor the holiday on my blog in the form of something sweet! I went through a couple of ideas before landing on empanadas, and then Nutella and banana seemed like the obvious choice of filling – to me anyway!

Is it just me or does this winter seem to be dragging on forever? We’ve been pretty lucky here in my part of the UK, we barely had any snow so I can’t complain too much. But the days are just so grey and dreary, it’s becoming very depressing. Trying to take decent photos in this weather is not a fun task either. The sun is out today though so I’m happy! We did have a solar eclipse this morning (that I slept through, oops!) so I think the sun may be protesting over the moon stealing it’s light! Did anybody see it? I think it was only visible in parts of Europe, and you only got the full effect if you’re very north like Scotland and Norway.

Baked Rainbow Donuts

You know what I love? Donuts! You know what I don’t love? Piping hot oil! It’s not because I’m all about being healthy (I mean, have you seen my blog?!) I’m just an incredibly clumsy person, me and hot oil don’t mix too well – you might say we’re like water and oil (sorry, that was a terrible joke!). That’s why I love baked donuts, they’re just as yummy as fried donuts but less burns!
