Nutella Stuffed Shakoy {aka Twisted Donuts }

Soft and fluffy twisted donuts, crispy on the outside and stuffed full of Nutella. Really delicious and so quick and easy to make (only one 15 minute rise needed!), these Filipino fried treats will not disappoint!

I have to warn you, these twisted donuts are dangerous! They’re yeast risen but they take hardly any time at all to make, you only need one 15 minute rise – something this delicious just shouldn’t be so easy to make, it’s not good for my waistline! These amazing fried treats were introduced to me by my good friend, Jhuls, who blogs over at The Not So Creative Cook. Don’t let the name fool you, she’s very creative and has some incredible recipes, make sure you check them out. When I saw her Shakoy recipe it went straight to the top of my “MUST make” list. This is Jhuls’ recipe that I have adapted, and I use the word “adapt” very loosely, the only real difference I made is I stuffed them with Nutella – because it’s been too long since I made anything with Nutella!

Burnt Caramel Latte Ice Cream Float

My favourite Starbucks drink homemade and extra indulgent. Rich espresso and burnt caramel syrup topped with foamy milk, with lashings of thick burnt caramel sauce. Served with a scoop of coffee ice cream, fresh whipped cream and even more burnt caramel sauce. Your morning coffee like you’ve never seen it before!

Burnt Caramel Latte Ice Cream Float - Rich espresso with smoky burnt caramel syrup, topped with foamy milk and lashings of thick burnt caramel sauce. Served with a scoop of coffee ice cream, fresh whipped cream and even more burnt caramel sauceUp until about a year ago there were two foods that I hated, and I was very vocal about that hatred. Those foods? Avocado and coffee! Fast forward to now and they’re probably two of the things I consume the most, I LOVE them. As a baker, I’m fully aware that coffee makes chocolate taste awesome, so I’m quite seasoned at putting it in chocolate cake. But I decided I needed to train myself to like coffee so I could bake with it as the main flavour, and somehow it worked. Now I can’t function without my morning coffee (that might have something to do with the caffeine though!) and the baristas at my local Starbucks know me by name. I hold my hands up and admit that I was wrong about coffee and I humbly apologise to it! And by way of apology, my first main coffee recipe is this Burnt Caramel Latte Ice Cream Float!

Fig Jam

Fig” Jam”

Jam, jelly, preserves, whatever you want to call them – jam making is a delicious skill to have under your belt! And it’s a skill that’s really easy to master! I love jam, there’s so many different ways you can use it, but it’s something I thought was really hard or awkward to make. I have made a jam once before, a fig jam, and it was delicious, but I wouldn’t consider it real jam – it’s more of a thick fig sauce I guess. This Spicy Mango Jam is my first real jam, and it was a big success!
