I’m slightly cheating with this week’s post as I didn’t technically make these! My friend Kathleen wanted to bake with me one night, so she made these wonderful creations while I supervised and talked her through it. It is my recipe though, so I did some of the work at least! And now Kathleen isn’t able to claim she can’t bake because these brownies were amazing – they were super gooey and fudgey, crinkly on top and oozing with an Andes mints fondant type filling.

Ferrero Rocher Cupcakes

Do these Ferrero Rocher cupcakes even need an introduction? These are the kind of cupcakes that walk into a party and everybody turns their head to stare! They’re the A-Lister of cupcakes, I mean look at them! Moist, rich chocolate cake filled with chocolate hazelnut ganache and topped with chocolate hazelnut swiss meringue buttercream – who doesn’t love chocolate and hazelnut together? They’re the classic couple, the Fred Astaire and Ginger Rogers of food pairings! What I’m trying to say is these cupcakes are to die for, if you like Ferrero Rocher these cupcakes are for you!

I am starting off my Great British Bake Off challenge with a real kicker, lemon and cardamom drizzle cake! The theme for last week’s GBBO was cake of course and I knew I wanted to make a British classic and decided on lemon drizzle cake. I wanted to give it a little depth though and make it a little more interesting and I thought cardamom would do just that, so this Lemon Cardamom Drizzle Cake was born!

The cake is moist and crumbly with a sharp, tart lemon flavour, just like a lemon drizzle cake should be. Then the cardamom brings in a subtle undertone that really gives depth to the flavour without taking away any of the tartness from the lemon. Lemon and cardamom really do compliment each other, it’s definitely a flavour profile I’ll be using more often.

Pancake Cupcakes with Lemon Buttercream Frosting and Lemon Syrup

This is a really simple recipe to do, as you want the sponge to be nice and light you start with creaming the butter and sugar together and then beating the eggs and zest. You fold in the flours by hand so you don’t over mix it, then you stir in the juices and cardamom and you’re ready to bake. The cardamom comes in pods that you have to split open to get the seeds, then you have to grind the seeds into a powder before you put them into the cake. This was a great excuse for me to buy a mortar and pestle since I didn’t already own one and have always wanted one! While the cake is baking you make up the simple syrup of sugar, lemon juice and a little more cardamom so it’s ready to pour onto the warm cake when it comes out of the oven! And thus, a Lemon Cardamom Drizzle Cake is born!

Fig Bars

It’s a gross and rainy Sunday evening, so I thought it was a great time to share these amazing fig bars since they always brighten my day!

I’m a huge fan of figs and I’ll eat them any way I can get them, but I don’t bake with them very often as I have trouble finding fresh figs anywhere. Lucky for me, these fig rolls only need dried figs – in fact, it’s best to use dried figs over fresh ones as they need cooking down into a jam. Perfect! I’m a big, big fan of fig rolls (or fig newtons as they’re known as in the US) and they were my inspiration for these, but these ones are soooo much better. They’re like fig rolls older, cooler brother!

Mint Chocolate Chip Ice Cream Buttercream Frosting

Yep, you heard me right. This mint chocolate chip ice cream frosting tastes exactly like mint choc chip ice cream, it is amazing! This is the kind of frosting that you can just eat straight out of the bowl, it doesn’t even need a cake to go with it! It’s so light and fluffy and extremely creamy! The key is the high butter to sugar ratio (which makes it’s extremely creamy and not overly sweet) and to whip up the butter for a minimum of 10 minutes (which makes it so light and fluffy), it also has cream in it to give it that ice cream taste. Now, I know you’re probably thinking it can’t taste that much like ice cream but you’re wrong! You have to try it to believe it!
