Mint Chocolate Chip Ice Cream Frosting

Mint Chocolate Chip Ice Cream Buttercream Frosting

Yep, you heard me right. This mint chocolate chip ice cream frosting tastes exactly like mint choc chip ice cream, it is amazing! This is the kind of frosting that you can just eat straight out of the bowl, it doesn’t even need a cake to go with it! It’s so light and fluffy and extremely creamy! The key is the high butter to sugar ratio (which makes it’s extremely creamy and not overly sweet) and to whip up the butter for a minimum of 10 minutes (which makes it so light and fluffy), it also has cream in it to give it that ice cream taste. Now, I know you’re probably thinking it can’t taste that much like ice cream but you’re wrong! You have to try it to believe it!

Very Inspiring Blogger Award

Happy Monday guys!

This is a non recipe post but a very exciting one because last week I was nominated for the Very Inspiring Blogger Award! Which really means a lot because that’s pretty much my whole reason for starting this blog, I want to inspire people with my baking and just share my adventures. I’m really grateful to all of you who read my posts and take the time to leave nice and encouraging comments!

The lovely Sarah of Sarah’s Kitchen nominated me for this award, which is amazing because I love her blog! If you haven’t checked it out yet you definitely should, because she makes a delicious looking Banoffee Pie which is my favourite ever dessert and oh my god, just look at these brownies I’m pretty sure they should be illegal! And that’s just the tip of the delicious ice berg!

So, thank you so much Sarah!

Nutella Stuffed Cinnamon Sugar Mini Muffins

Nutella Stuffed Cinnamon Sugar Mini Muffins Oh, what can I say about these little drops of heaven that doesn’t sound like some inappropriate love poem?  They are probably some of the best things I’ve ever baked, and I’ve baked a lot of great things (who needs modesty, right?).  Unfortunately I can’t claim the credit for this recipe, it’s from the wonderful Sally’s Baking Addiction. The only changes I made was I made them in mini form and used plain flour! Nutella Stuffed Cinnamon Sugar Mini Muffins
