I love Wales, it’s a beautiful country full of pretty awesome people (unless the rugby is on, then they’re my enemy!). I lived in Wales for four years, the beautiful sea-side town of Aberystwyth, I miss it a lot. One of the many amazing things to come out of Wales is Welsh cakes – they’re so simple, but oh so delicious. They’re thin, flat cakes that you cook on a griddle, full of dried fruit (usually raisins/sultanas) and mixed spices. I hate to think how many Welsh Cakes I got through in my four years in Aber, probably far too many. I’ve never made them myself though, I was always a bit intimidated by them – they’re a well loved, traditional treat in Wales, if you get them wrong you’re not forgiven!

I think I outdid myself on over-the-top dessert you guys. I didn’t think I could out do my Chocolate Chip Cookie Ultimate Layer Cake, yet here I am with a big chocolate egg spilling creme egg filling all over a fudgy brownie sitting in a nest of cadbury flakes! But this Easter weekend almost falls on my 30th birthday, so I figured I should go a bit crazy with it! Maybe we can call this cake my pre-midlife crisis!

Burnt Caramel Latte Ice Cream Float

My favourite Starbucks drink homemade and extra indulgent. Rich espresso and burnt caramel syrup topped with foamy milk, with lashings of thick burnt caramel sauce. Served with a scoop of coffee ice cream, fresh whipped cream and even more burnt caramel sauce. Your morning coffee like you’ve never seen it before!

Served with a scoop of coffee ice cream, fresh whipped cream and even more burnt caramel sauceUp until about a year ago there were two foods that I hated, and I was very vocal about that hatred. Those foods? Avocado and coffee! Fast forward to now and they’re probably two of the things I consume the most, I LOVE them. As a baker, I’m fully aware that coffee makes chocolate taste awesome, so I’m quite seasoned at putting it in chocolate cake. But I decided I needed to train myself to like coffee so I could bake with it as the main flavour, and somehow it worked. Now I can’t function without my morning coffee (that might have something to do with the caffeine though!) and the baristas at my local Starbucks know me by name. I hold my hands up and admit that I was wrong about coffee and I humbly apologise to it! And by way of apology, my first main coffee recipe is this Burnt Caramel Latte Ice Cream Float!

Homemade Cola

A really easy to make homemade cola soda that is bursting with flavour from spices, citrus and lavendar. This is what cola should taste like when it’s made with real ingredients and not 110% sugar*!               *probably an exaggeration

My mum’s first reaction when she saw this Homemade Cola was “why isn’t it black?!” And that may well be similar to the reaction you are having, it certainly doesn’t look like the cola we know. And, I’ll be straight up with you, it doesn’t exactly taste like it either. But there’s a good reason for that, and that is it’s made with a reasonable amount of sugar and all natural flavours and no colouring. I won’t claim to know exactly what Coca Cola put in their drinks, even after having been to the World of Coke twice (totally worth doing if you’re in Atlanta just btw) but I know there is A LOT  of sugar, and colourings to make it as dark as it is.
