There are a few things that Britain takes pride in, usually they are things most people might find odd – like our ability to queue for anything and everything, we take queuing etiquette very seriously. One thing we rightfully take pride in is our biscuits – nothing beats a British biscuit! From the tough cookie HobNob to the beloved Custard Cream, and everything in between – we love our biscuits! Of course, these are not to be confused with what American’s call biscuits, when a Brit says “biscuit” we mean a cookie. I’ve picked up many Americanisms over the last few years, having an American best friend will do that to a person,  and I’ll refer to lots of things as “cookies” – but the British classics? They will always be biscuits – a custard cream, a jammie dodger, a chocolate bourbon, a rich tea – always biscuits!

Cherries really are the perfect summer fruit, so sweet and juicy – they’re perfect to snack on during the hot summer days. I always forget how much I love cherries until the season rolls around and then I can’t get enough of them! I love putting cherries in things, especially when combined with chocolate, but I don’t appreciate the delicious cherry flavour by itself enough. So, imagine my delight when I was walking the dogs in our local, public field and came across a cherry tree – full of ripe, juicy cherries! I was very excited, and after confirming with myself that they were in fact cherries and I wasn’t about to nightlock myself, I picked a nice bag full (leaving plenty for other dog walkers, and the birds!). They were so good just on their own, but I knew I wanted to put them in something where the wild cherry flavour could shine! I must have been on weekend mode, because a cocktail was my first idea! And a cocktail is always the best idea, in my book!

British summer time means a lot of different things to different people; it can mean day trips to the park, splashing around in rivers; complaining about the heat as soon as it goes over 25C  (That’s 77F in American money); complaining about the lack of heat when it starts to rain; Wimbledon; Wasps; Festivals and so much more! One thing that I think we can all agree that makes the British summer fantastic is Strawberries, we grow amazingly delicious Strawberries – and nothing says British summer like dipping a big, juicy strawberry in some cream as you watch tennis played on grass! I had intended to make and share this recipe to celebrate Wimbledon, but here we are, weeks after it’s finished! Oops! It doesn’t make these Roasted Strawberry Scones any less tasty or any less British though!

At the beginning of this month the blogging world lost a little of it’s brightness, Selma from Selma’s Table passed away and left a big hole in our world. She was not only a skilled chef and writer, but also a supportive and cherished friend to so many. I always looked forward to reading her blog and was so happy to see her comments pop up on my posts, always so encouraging and kind! I can’t imagine the loss that her son, her family and her friends are feeling at this time and my thoughts go out to them every day. I will always miss her presence in my blogging life and regret that I was never able to meet her in person, but her generous nature and spirit will always be present here. 

Selma was one of the most active and enthusiastic members of Fiesta Friday, so it was only right for her memory to be honored with a very special Fiesta Friday, one that will always be hers! Here we are sharing posts dedicated to this wonderful woman that touched so many of us. This is mine.

Happy Friday guys! It’s been a while since I posted a new recipe, I’m sorry about that – it’s just been a bit of a crazy couple weeks! But I came back with an awesome one for you, so I hope you’ll forgive me! I was at the market buying strawberries to make jam with and they had a big box of peaches for £1.50, so I had to buy them! All I had to do then was decide what to do with the peaches, and peach pie it was – great decision! This pie is amazing – it has juicy, flavourful peaches that just have the taste of summer in every bite, which are complimented beautifully by the warm cinnamon and caramelly brown sugar. I did a double crust using my absolute favourite pie crust recipe – it’s so easy to make, so buttery and absolutely delicious! Serve your warm slice of peach pie with a scoop of vanilla ice cream and you’re in heaven!
