Not so long ago you’d blink and a dozen new cupcake businesses had popped up, cupcakes were the in thing! Personally, I love a good trend, especially when it’s something as awesome as cupcakes! The trend may have died down now, but my love for cupcakes definitely hasn’t. I mean, what’s not to love? It’s basically an excuse to eat an entire cake and not have your family look at you like you’re dishonouring their name. And they’re so versatile too, with limitless designs and flavour combinations, you’re spoilt for choice! I think cupcakes get a bit of a bad rep to be honest, but I think people who look down on cupcakes just don’t know how to appreciate joy 😉

It’s that time of year –  summer is ending, autumn is getting so close you can smell the pumpkin spice and kids are heading back to school! I love summer for all it’s wonderful flavours, all my favourite fruits are in season and tasting amazing, plus it’s the perfect time to enjoy a refreshing cocktail or Pimms cup n the garden. But autumn is definitely my favourite time of year, the weather isn’t great in the UK usually – we just have a lot of rain – but it’s cool out during Autumn and that makes me happy, even if it is wet too! It’s such a cozy time too; snuggly sweaters, hot drinks and warm spices – is there anything more comforting than Autumn?

They always say that you should go grocery shopping with a list and stick to it (only deviating for a better deal on something you need), and for budget purposes that’s definitely a good idea! I don’t know who “they” are, but they’d probably be very disappointed with my shopping habits! I definitely go with a list in mind, but I usually get distracted by offers and random products, I usually end up coming home with a lot of things I never planned to buy. And while that may not be too kind of my bank balance, it does usually end up producing yummy recipes! This rice pudding is one of those times – I was shopping in Aldi and saw pudding rice and thought to myself “hmm I should make rice pudding soon” so I put a bag in my trolley! That pudding rice proceeded to sit in my cupboard for months, unopened – until it eventually met it’s destiny in the form of this delicious Spicy Mango Layered Rice Pudding!

There are a few things that Britain takes pride in, usually they are things most people might find odd – like our ability to queue for anything and everything, we take queuing etiquette very seriously. One thing we rightfully take pride in is our biscuits – nothing beats a British biscuit! From the tough cookie HobNob to the beloved Custard Cream, and everything in between – we love our biscuits! Of course, these are not to be confused with what American’s call biscuits, when a Brit says “biscuit” we mean a cookie. I’ve picked up many Americanisms over the last few years, having an American best friend will do that to a person,  and I’ll refer to lots of things as “cookies” – but the British classics? They will always be biscuits – a custard cream, a jammie dodger, a chocolate bourbon, a rich tea – always biscuits!

British summer time means a lot of different things to different people; it can mean day trips to the park, splashing around in rivers; complaining about the heat as soon as it goes over 25C  (That’s 77F in American money); complaining about the lack of heat when it starts to rain; Wimbledon; Wasps; Festivals and so much more! One thing that I think we can all agree that makes the British summer fantastic is Strawberries, we grow amazingly delicious Strawberries – and nothing says British summer like dipping a big, juicy strawberry in some cream as you watch tennis played on grass! I had intended to make and share this recipe to celebrate Wimbledon, but here we are, weeks after it’s finished! Oops! It doesn’t make these Roasted Strawberry Scones any less tasty or any less British though!
