You can used canned peaches, so you can enjoy these amazing cupcakes all year round!

I don’t think cupcakes are as trendy as they once were. Not so long ago you’d blink and a dozen new cupcake businesses had popped up, cupcakes were the in thing! Personally, I love a good trend, especially when it’s something as awesome as cupcakes! The trend may have died down now, but my love for cupcakes definitely hasn’t. I mean, what’s not to love? It’s basically an excuse to eat an entire cake and not have your family look at you like you’re dishonouring their name. And they’re so versatile too, with limitless designs and flavour combinations, you’re spoilt for choice! I think cupcakes get a bit of a bad rep to be honest, but I think people who look down on cupcakes just don’t know how to appreciate joy 😉

I started my last post talking about how time seems to slip me by and it looks like I’m starting this one off the same way, at least I’m consistent! This post almost didn’t happen, because I did not realise how late into the week we are – it’s Friday apparently?! Did everybody realise this?! Has somebody alerted the PM? (On second thoughts don’t, he’ll probably impose a time tax) It’s actually currently Thursday as I write this, 11:30pm on Thursday – oops! I’ve been baking all evening in the kitchen (where else would you be baking, Michelle?!) and I finally sat down, ready to catch up on some blog reading before I go to bed when it hit me that tomorrow (now today) would be Friday and I hadn’t even started on a post! Luckily I had at least edited the photos, so it’s just the actual writing I have to do. Please tell me I’m not the only one who finds themselves this unorganised on a frequent basis? Lie to me if you have to!

So, Avengers: Age of Ultron was released in the UK this week. I went to the midnight premier on Wednesday night because I’m a nerd like that and I hate waiting! I’m not going to give you any spoilers don’t worry, I know it’s not released in the US until next week. I was a bit underwhelmed by it though if I’m being honest, but there were lots of awesome parts. All I’ll say though is I’m so glad that was Joss Whedon’s last MCU movie, I love his TV work but he cannot write Marvel, he ruins it! Bring on the Russos and Civil War (although I’m still mad that they’re doing that!). Who else has seen it? Or is planning on seeing it? Do let me know your thoughts!

Parsnip and Raspberry Cupcakes with Raspberry Swirl Cream Cheese Frosting

Last week (September 15th-21st) was National Cupcake Week in the UK and I only found out on Saturday, this happens to me every year! So yesterday I decided to celebrate the last day by developing a new cupcake flavour – and so parsnip and raspberry cupcakes with raspberry swirl cream cheese frosting were born!

I love putting vegetables in cake, they give the cake a moistness you can’t really get any other way. The parsnip in these cupcakes also give them a depth of sweetness you just can’t get with sugar, they lend themselves really well to cupcakes and I can’t believe it’s taken me so long to bake with parsnips! It’s weird though, when I told people I was putting parsnip in cake they were confused – the same thing happened when I made sweet potato cupcakes – yet nobody bats an eyelid at the idea of carrot cake! I made my mum taste these cupcakes before I would tell her what was in them so her opinion wasn’t swayed by the unusual ingredient – she loved them. She said she could taste something but couldn’t put her finger on what it was, when I told her it was parsnip she was surprised but definitely a convert!

I didn’t want to use just parsnip and raspberries really compliment the parsnip and spices in this cake, it’s definitely a winning combination. The raspberry flavour comes from a homemade raspberry sauce and raspberry cider. I’ve been baking a lot with raspberries at the moment, I want to use them as much as possible while they’re still in season, and Tesco’s raspberries have been really good lately! I’ve bought a bunch that I’ve frozen to use in smoothies later!

Ferrero Rocher Cupcakes

Do these Ferrero Rocher cupcakes even need an introduction? These are the kind of cupcakes that walk into a party and everybody turns their head to stare! They’re the A-Lister of cupcakes, I mean look at them! Moist, rich chocolate cake filled with chocolate hazelnut ganache and topped with chocolate hazelnut swiss meringue buttercream – who doesn’t love chocolate and hazelnut together? They’re the classic couple, the Fred Astaire and Ginger Rogers of food pairings! What I’m trying to say is these cupcakes are to die for, if you like Ferrero Rocher these cupcakes are for you!
