Love is taking over Giraffes Can Bake at the moment, and I am a-okay with that! Valentine’s Day seems to be a bit of a marmite holiday, and I am one of the lovers! Sure, you could say it’s a commercial  holiday exploited by Hallmark and chocolate companies but it’s also about love, and what’s wrong with that? A day to celebrate love, in all forms, is a day I’m a fan of. You don’t need to buy into the commercial side of it to celebrate love. And in this often scary and sad world, I think we all need a day where we take that extra step to tell the people we care about that we love them and wouldn’t be about them. So yes, I am firmly in the pro-Valentine’s Day camp.

Which means I couldn’t stick to just one Valentine’s Day recipe for you. A few days ago I shared an indulgent Valentine’s Day dessert for two, and today I am sharing a pretty and yummy Valentine’s Day cocktail for two! The lovely people at Vitamix sent me one of their awesome blenders, and I have used it to create some amazing recipes made super easy with the Vitamix – and these Strawberry and Thyme Slushie Cocktails is one of those recipes! My Vitamix made ridiculously easy work of crushing the ice, in under 60 seconds I went from ice cubes to slushy goodness! Pretty damn awesome!

The speed and ease of this Valentine’s Day Cocktail recipe isn’t the only thing I love about it of course, the flavours are amazing. Sweet strawberry deliciousness combined with the subtle, aromatic thyme is just a match made in heaven. If a strawberry had a valentine, I think it would be thyme, they’re made for each other. The ice is crushed with lots of fresh strawberries, which means it’s full of flavour with none of the added who-knows-what you get in a slushy from some arcade! Top it all off with some soda water for a bubbly, slushy cocktail delight!

It will not only wow them, but it takes no time at all to make, allowing for more time to whisper sweet nothings in their ear 😉 It makes a great cocktail to serve any time of year though if you ask me. A slushy seems more like a summery drink I’m sure, but it’s delicious even in the dead of winter. Especially if you top it off with soda water, you get all the goodness of slushie cocktail, with none of the brain freeze! These pretty slushie cocktails would be perfect to celebrate Galentine’s Day too – they’ll go perfectly with the love and laughter shared between you and your girlfriends!

Strawberry & Thyme Slushie Cocktails

Yield 2 Cocktails

Sweet strawberries are muddled with aromatic thyme and white rum, with crushed strawberry ice and topped up with soda water. The perfect Valentine's Day Cocktail

Ingredients

For the cocktail:

  • 2 cups (320g) strawberries, sliced into quarters (and two whole ones to garnish)
  • 8 sprigs fresh thyme (plus two more to garnish)
  • 4oz (100ml) of white rum
  • 1 cup (240ml) ice
  • 1/2 cup (120ml) soda water

Equipment needed:

  • Vitamix Blender (or equivalent)
  • Muddler 
  • Two highball glasses
  • Jigger/small measuring jug
  • Cocktail/Ice Tea/Long Spoon

Instructions

  1. Put the total of three strawberries (four, if they're small berries) chopped into quarters into each highball glass. Add the the leaves of four sprigs of thyme to each glass.
  2. Use a muddler (or wooden spoon if you don't have a muddler) to crush them together and release all the flavours. 
  3. Put 2oz/50ml of white rum in each glass. 
  4. Put the ice and remaining strawberries in your Vitamix Blender with the ice. And blend until crushed into a slush consistency (with a vitamix this will take no more than 60 seconds usually, use a tamper to help get the ice to the blade if needed)
  5. Spoon the strawberry slush into the glasses, filling about 2/3 full. Top up with soda water. Stir with your cocktail spoon three or four times.
  6. Garnish with a sprig of fresh thyme and a whole strawberry (cut into a heart shape if you feel fancy/cute). 
  7. Serve immediately

Notes

The soda water amount is approximately, how much you use will depend on the size of your glass and personal preference. 

To make into a mocktail, just omit the rum.
