At the beginning of this month the blogging world lost a little of it’s brightness, Selma from Selma’s Table passed away and left a big hole in our world. She was not only a skilled chef and writer, but also a supportive and cherished friend to so many. I always looked forward to reading her blog and was so happy to see her comments pop up on my posts, always so encouraging and kind! I can’t imagine the loss that her son, her family and her friends are feeling at this time and my thoughts go out to them every day. I will always miss her presence in my blogging life and regret that I was never able to meet her in person, but her generous nature and spirit will always be present here. 

Selma was one of the most active and enthusiastic members of Fiesta Friday, so it was only right for her memory to be honored with a very special Fiesta Friday, one that will always be hers! Here we are sharing posts dedicated to this wonderful woman that touched so many of us. This is mine.

Let’s talk about pudding again, shall we? I’ve talked before about how in Britain the term “pudding” means any kind of dessert, well we also have a type of pudding called pudding – because why keep things simple and easy to understand! This type of pudding is generally sponge based and usually steamed, there’s lots of different types including the ever giggle inducing spotted dick and well known Christmas pudding! Sticky toffee pudding is probably one of the most loved though, it’s hard to resist that deep toffee flavour and gooey, sticky sauce it’s covered in!

If you’ve been living under a rock and have missed all the buzz around Serial – it’s a nonfiction story told week by week about a murder that happened 15 years ago, a young man was convicted of murdering his ex girlfriend. Nothing quite adds up though and Sarah Koenig has been digging through the case since last year trying to get to the bottom of it. 

It’s really interesting, so gripping and really thought provoking. There’s so much to think about and you can go from thinking “yes he totally did it” to “there’s no way he did it” in the space of one episode. Go download it now, and you can thank me later! There’s 11 episodes so far, new episodes released every Thursday, I don’t know how many there will be total – I think they just keep going until they come to some kind of conclusion

Sweet Potato Pie Bars

In my last post I talked about coming up with Thanksgiving recipe ideas and how there are so many yummy dessert recipes out there and so I didn’t need to come up with my own. Well, need and want are very different things – we may not need another Thanksgiving dessert recipe idea, but I wanted one!

Sweet potato is one of my all time favourite foods, I’ve yet to find a way I don’t like to eat it! But I’d never eaten sweet potato pie before, so naturally I decided I needed to make it! I somehow don’t own a pie plate, I don’t know how this happened but here we are – the need to make a pie but no pie dish to make it in. But who says pie needs to be round anyway? These sweet potato pie bars are the perfect solution to the lack of pie dish conundrum – and I would totally make it this way again even after I’ve acquired my own pie dish. There’s just something about slicing it up into little bars that makes it so much more appealing to me – maybe it’s because I could add a streusel topping and a marshmallow glaze without ruining the clean look of a pie! Making them in bars is a great way to serve them up for Thanksgiving too – no fiddly too thin pieces to make sure everybody gets a piece, a fork isn’t even needed if you want to mingle around the the table. I definitely think they have a more rustic, family feel to them, don’t you?

Since I’d never even eaten sweet potato pie before, I decided to start from an established recipe. I chose this one by Joy the Baker because I love her recipes and the ingredients list on this had me drooling! I thought to myself – I can make her one and then make any changes to suit my tastes. Silly me, I should have known I wouldn’t want to change anything about one of her recipes. I used her crust recipe and filling recipe, then just made it in bar form and added a streusel and glaze. I thought about topping this pie with a lattice crust, but my weakness for streusel beat that idea out. And I’m glad it did, it gives an extra yummy layer of texture, and is a great vehicle for the marshmallow glaze. Marshmallow is a go to pairing with sweet potato dishes and there’s a good reason for that, it just plain works! it’s simple to put together too, it’s just butter, marshmallows and sugar. I melted marshmallows to add to the mix, but in a pinch marshmallow fluff would probably do the trick too. It’s a nice, thick glaze too so it holds its own against the streusel!

Coriander isn’t something I would have thought to put in myself, but it really does make this pie shine! You’ll want to buy coriander seeds and grind them yourself too, coriander is one of those spices that tends to lose it’s flavour quickly once ground. There’s a lot of yummy, warming spices in this pie of course – as well as the coriander we have nutmeg and cinnamon. You cook the filling through before adding it to the pie, so you awaken all those delicious spices that bring so much fall flavour. It’s a good idea to blend the filling first too to make sure the whole thing is smooth, I used an immersion stick blender but you could add it to your blender and give it a whirl too.  

There’s a fair bit of work in putting this pie together, with cooking the potatoes, cooking the filling, making the crust, making the streusel and the glaze. But it really isn’t very daunting, you can do stages simultaneously and each part is pretty easy. In bar form as well it’s very forgiving – you don’t have to worry about the top of your pie or breaking the crust!

Pumpkin Pie Smoothie

Pumpkin Pie Smoothie

 “I thought our story was epic, you know. You and me. Spanning years and continents. Lives ruined, bloodshed. Epic” No, I’m not talking about this smoothie! It is very, very good but I can’t say it’ll ruin any lives. I’m just trying to softly introduce you to my tendency for getting way too involved in the lives of fictional characters, that quote is from an episode of Veronica Mars I am watching as I write this. Now, I don’t know if you ever watched Veronica Mars – but if you have, you might understand why I’m a bit misty right now (their story was epic, just FYI). 

Now, that was your soft introduction – now I’m just going to through you into the deep end! Today was a big day for Marvel fans, a lot of their upcoming movies were officially announced and let’s just say it’s been a bit of a roller coaster of emotions – from their first female lead movie being announced, to their first black superhero lead movie being announced to the confirmation of a specific storyline they’re going to be delving into that will most likely kill off my favourite Marvel character. I’m going to leave it at that or you’ll all run away before you get to know more about this yummy, seasonal smoothie.

So, I will actually start talking about this recipe now and stop crying about Steve Rogers! This pumpkin pie smoothie made a bit of a mess in my kitchen this morning – and by that I mean I discovered my blender was leaking when I picked it up and smoothie started pouring out of the bottom! Luckily, I managed to save enough to savour the yummy autumn flavours and have a good breakfast!

It’s basically like drinking pumpkin pie and it’s good for your tummy. It not only contains pumpkin puree and the spices, but it also has kefir milk. Kefir milk is something I recently discovered after it was recommended to me by a friend, and now I put it in all my smoothies! I normally like to keep dairy out of my smoothies, but this is a fermented milk using kefir grains (not really grains, it’s a yeast/bacterial fermentation starter) making the milk full of tummy loving probiotics! It’s also packed full of protein and also low in lactose for those of you who are sensitive to high amounts. It doesn’t just improve the health factor of the smoothies either, it’s super yummy -it’s got a similar taste to greek yogurt, so why not replace the yogurt in your smoothies with kefir for that same tang, but extra goodness!
