Ingredients
  1. 500g fresh dates
  2. 75g roasted almonds*
  3. 1/4 tsp ground cinnamon
  4. 500g dark chocolate (minimum 74% cocoa for best results, but can be changed to suit your personal tastes of course)
Instructions
  1. Put the almonds in a bowl and add the cinnamon, toss to combine.
  2. Use a sharp pairing knife to slice lengthways down the side of a date, pull out the stone and push in an almond. Repeat with all dates.
  3. Place stuffed dates in the fridge for 30 minutes (not entirely necessary, but I find cold dates help the chocolate set quicker!)
  4. Melt half of the chocolate in a heatproof bowl, either in the microwave in 30 second intervals stirring in between, until melted and smooth. Or in a double boiler, stirring until melted and smooth.
  5. Gently stick a fork into the side of a date (or use a wooden skewer!) and dip completely in the chocolate. Let the excess chocolate drip off, tap the fork lightly on the side of the bowl to help it along, then place the date on a baking sheet lined with parchment paper. Repeat until all dates are covered.
  6. Chill in the fridge for 30 minutes.
  7. Melt the other half of the chocolate and re-dip the dates for a double coating and extra chocolate goodness.
  8. Chill in the fridge for another 30 minutes. Or pop in the freezer for a chewier, toffee like consistency
Notes
  1. *The amount of almonds depends on the amount of dates, you basically need as many almonds as you have dates. 75g is an approximate amount.
  2. You can buy raw almonds and roast them yourself if you prefer, flavour with whatever you like - cinnamon is my flavour of choice!
  3. Sprinkle coconut, crushed nuts, sea salt flakes or whatever you fancy on top of the freshly dipped dates for a fancier finish! For an even fancier, shiny finish temper the chocolate too!
  4. Store in the fridge or freezer

So easy to make and they make the most delicious sweet, healthier snack. You'll LOVE them!Didn’t I saw they were easy? I feel a bit guilty even calling this a recipe to be honest, they barely call for one they’re so easy! Plus they’re totally customisable, you can use pecans, walnuts, hazelnuts, or even a nut butter in place of a whole nuts, it might be a tad bit messier but super yummy! Or you can smoke your almonds, salt them, sugar them, roast them in honey or coat them in chocolate too for even more chocolate goodness! Whatever your fancy! The world is your oyster with these, change them up to suit your tastes, mood and even the season! And why not mix it up too? Make your very own party mix, a variety of nuts and chocolate type for a tasty surprise each time. And if you’re a big toffee fan, stick the finished dates in the freezer for a few hours and you’ll have yourself an almond stuffed, chocolate covered chewy, scrumptious date toffee! I don’t believe in limiting your creativity, especially when it comes to creating delicious things so just go crazy with these and I’d just LOVE to see and hear about your adventures with them!
