Sweet strawberries are muddled with aromatic thyme and white rum, with crushed strawberry ice and topped up with soda water. The perfect Valentine's Day Cocktail
Ingredients
For the cocktail:
2 cups (320g) strawberries, sliced into quarters (and two whole ones to garnish)
8 sprigs fresh thyme (plus two more to garnish)
4oz (100ml) of white rum
1 cup (240ml) ice
1/2 cup (120ml) soda water
Equipment needed:
Vitamix Blender (or equivalent)
Muddler
Two highball glasses
Jigger/small measuring jug
Cocktail/Ice Tea/Long Spoon
Instructions
Put the total of three strawberries (four, if they're small berries) chopped into quarters into each highball glass. Add the the leaves of four sprigs of thyme to each glass.
Use a muddler (or wooden spoon if you don't have a muddler) to crush them together and release all the flavours.
Put 2oz/50ml of white rum in each glass.
Put the ice and remaining strawberries in your Vitamix Blender with the ice. And blend until crushed into a slush consistency (with a vitamix this will take no more than 60 seconds usually, use a tamper to help get the ice to the blade if needed)
Spoon the strawberry slush into the glasses, filling about 2/3 full. Top up with soda water. Stir with your cocktail spoon three or four times.
Garnish with a sprig of fresh thyme and a whole strawberry (cut into a heart shape if you feel fancy/cute).
Serve immediately
Notes
The soda water amount is approximately, how much you use will depend on the size of your glass and personal preference.
To make into a mocktail, just omit the rum.
