Can we claim it’s officially summer yet? We’re still having lots of grey and rainy days which are typical for a British summer, but the temperature is consistently climbing and the sun is showing its face more and more often. And summer calls for cocktails, at least in my house! I love a good, classic cocktail like the Moscow Mule – but I love to add my own little twists to make it yummier and revamp it for the season! So this Raspberry Moscow Mule was born.
A classic Moscow Mule is made with high quality vodka, spicy ginger ale and fresh lime juice, and it is always served in a copper mug. It will still be delicious in a regular glass, but a copper mug really makes all the difference – it keeps it colder, the ginger ale will be bubblier and as the copper oxidises with the vodka it really creates a unique taste. I kept this Raspberry Moscow Mule pretty close to the classic, I just added some fresh raspberries to really bring it into summer and lift the flavours. I also made mine with Crabbie’s Alcoholic Ginger Beer for an extra kick and because I love the strong, spicy flavour it has. It’s so simple and so delicious – I could drink it all summer long.

High quality vodka, spicy ginger beer, fresh lime juice and sweet, tart raspberries served in a copper mug. A summery twist on the classic Moscow Mule cocktail
Ingredients
- 4oz (4 shots) high quality vodka, I use Belvedere
- 125g fresh raspberries (or thawed frozen)
- 1 tbsp sugar
- 2 tbsp lime juice (1 large lime)
- 750ml Crabbies Ginger Beer (or non alcoholic ginger beer)
- Lime wedges/slices, fresh raspberries and mint leaves for garnishing
Instructions
- Put the vodka, raspberries, sugar and lime juice in cocktail shaker and muddle together to release all the raspberrie juice. Strain into two chilled copper mugs.
- Top up with the ginger beer
- Garnish with lime wedges, fresh raspberries and mint leaves.
- Serve immediately.
Using a high quality vodka is very important to get the best possible taste. I always use Belvedere Polish Vodka, it’s my favourite as it’s smooth with delicious notes of almond and vanilla. You can use your favourite vodka, of course. Using alcoholic ginger beer really gives it an extra kick, bringing your cocktail to the next level, but you can use alcohol-free ginger beer for a more mellow cocktail. You can also use ginger ale to tone down the spicyness if you prefer, it’s your cocktail make it your way! Make sure to chill your copper mugs first as it will keep the drink cold for a long time without the need for ice – nobody likes a diluted cocktail, right?

Alcoholic ginger beer is amazing! I think they’ve started selling Crabbies in the US recently so definitely keep an eye out for it, they do a raspberry flavour too which is yum! It’s basically like drinking ginger beer but with booze haha!

I never knew why Mule’s were served in copper mugs until now – I thought it was just one of those traditions that had evolved for no particular reason. Michelle, I’m with you on quality vodka – lessens the morning after feeling as well as tasting better 🙂 and also – alcoholic ginger beer going into the mix – just brilliant.

I just had the best Moscow Mule last night at a friend’s house last night. He got the authentic, all copper mugs from Tito’s Vodka and they were so thick that they help the chill for the whole drink! I can’t wait to give him this recipe so we can have them again in those mugs!!!

How much of the raspberry mixture should there be for the 2 servings? Because when I made this it yielded very little and I ended up using a whole bottle of ginger beer per cup. Is that correct?

Because of the fizz and the copper mug, it’s not really something you can make ahead of time – fresh is definitely best! But it only take a couple mins to make, if that!
