So, I’m a bit late with this Cinco de Mayo recipe – since it’s tomorrow! Oops! Time just continues to get the better of me, but better late than never, right? And these amazing Peaches ‘n’ Cream Margarita Popsicles can be enjoyed all summer, hell, all year! They’re really easy to make with just a few ingredients, pop them in the freezer today and they’ll be ready to enjoy tomorrow!

Popicles, or ice lollies as we tend to call them here in the UK, are one of my all time favourite treats – I think it stems from my love of ice cream, I just adore all frozen treats! They’re great to cool down on hot summer’s day, but I have to admit I enjoy them when it’s snowing outside too! But, today the sun is out and it’s absolutely gorgeous in London, it’s gonna be a real scorcher this weekend too – so it’s the perfect time to make some homemade popsicles and sit out in the sun.

Homemade popsicles are so much better than store bought too, you know exactly what goes into them so there’s not a metric tonne of added sugar or other crap – these Peaches ‘n’ Cream Margarita Popsicles only have 5 ingredients total, and one of them is tequila! Don’t worry, the tequila isn’t overpowering – there’s just enough so you can taste it and get that margarita feel, and little enough that they freeze well and you won’t feel like you’re doing a tequila slammer in the middle of the day! Homemade popsicles are great too because you can have whatever flavour you like, whenever you like, I doubt you’ll be finding Peaches ‘n’ Cream Margarita Popsicles in the frozen aisle on your next trip to Tesco! You will need popsicle moulds of course, but you can get them for really cheap these days and I’ve even seen people make popsicles in those reinforced muffins cups! So, what are you waiting for?

Peaches ‘n’ Cream Margarita Popsicles

Creamy and fruity, with just a hint of tequila! These Peaches 'n' Cream Margarita Popsicles are the perfect frozen treat for Cinco de Mayo and all summer long.
**Mixing and leaving the jugs just makes it easier and cleaner to pour into the moulds!

Ingredients

For the peach layer:

  • 220g peach slices, peeled (fresh or canned*)
  • 1 tbsp lime juice (about 1/2 lime)
  • 1 tbsp tequila

For the cream layer:

  • 100g greek yogurt
  • 3 tbsp sweetened condensed milk
  • 1 tbsp lime juice (about 1/2 lime)
  • 1 tbsp tequila

Instructions

To make the peach layer:

  1. Put all the ingredients into a blender, and pulse until smooth. Set aside , leave in blender jug**.

To make the cream layer:

  1. Put all the ingredients in a jug and stir together until combined.

To make the popsicles:

  1. Pour a little of the peach mixture into the bottom of the popsicle moulds. Pour a little of the cream mixture on top. Repeat, alternating with peach and cream, until filled to the top.
  2. Place the sticks in and put in the freezer for at least 8 hours.
  3. Run the moulds under warm water, or place in a bowl of warm water, to help loosen the popsicles from the moulds.

Notes

*If using canned get them in juice or water, not syrup, so they're not overly sweet
Makes 4 x 3oz/90ml popsicles, double as needed

See, I told you it was easy! Homemade popsicles are the way to go clearly – easy, check! Delicious, check! Pretty, check! Alternating adding the peach mixture and yogurt mixture gives you that nice patterned effect – they still mix together a little which is nice, but the difference in densities of the liquid make them sit on top of each other so they look pretty and taste great! Peaches ‘n’ cream is obviously a classic combo, and it works delicious in popsicle and margarita form – in every delicious lick!

      It’s horrid down here, it’s been at 24 degrees but muggy and humid and the sun’s not made an appearance all day! Glad it’s nice where you are though! Definitely time for ice lollies!
      It’s gonna be even hotter tomorrow, so stick them in the freezer now ready for tomorrow hehe!

    There is nothing like some adult popsicles to cheer you up. So bright and delicious and since mangos are in season now here in Asia I think I am going to swap out your peaches. Loving how pretty these little guys are. Fun for a party or gathering.
