Can you believe we’re almost another year down? And we still don’t have time travel and teleportation?! I thought this was supposed to be the future! I think a little time travel could have helped us out immensely this year too, it was a bit of a rollercoaster one, so much happened it’s hard to believe it all fit into 365 days! With still a few days left until the clock chimes us into the next one too, who knows what else this year will bring us!

When you first mix up this New Years Eve Cocktail it is a gorgeous pink colour from the grape syrup, then you stir in the gold lustre dust and it turns into a magical, shimmery, golden colour that is sure to impress.

This Shimmery New Years Eve Cocktail doesn’t only look impressive with its shimmery swirls, but it’s really delicious too! It’s made using a simple grape syrup that is easy to make and is a gorgeous pink colour. You just add an ounce of the grape syrup to your champagne glass, top up with a dry champagne to balance the sweetness of the syrup. You can just stop there if you like, it will look beautiful and taste fantastic – but once you stir in the gold lustre dust you’ve really got a fun and festive New Years Eve Cocktail! You could even swap out the gold lustre dust for a pink one to get a pink shimmery New Years Eve Cocktail!

A glamorous and delicious shimmery new years eve cocktail that is sure to impress

Ingredients

For the grape syrup:

  • 1 cup (160g) red grapes
  • 1/2 cup (100g) sugar
  • 1/2 cup (120ml) water
  • 1 tbsp lemon juice

For the cocktails:

Instructions

To make the grape syrup:

  1. Put all the ingredients in a small saucepan and stir together. Bring to a boil on a medium heat, and allow to boil for 5 minutes, until the skins of the grapes pop.
  2. Reduce to a simmer for 5 minutes. 
  3. Remove from heat and leave to cool, strain through a fine mesh sieve. Store in a sealed bottle or jar in the fridge for up to two weeks.

To make the cocktail:

  1. Set out four champagne glasses, and pour 1 ounce of grape syrup in each glass.
  2. Top up with champagne
  3. Add 1/2 tsp of gold lustre dust into each cocktail and stir to make shimmer
  4. Serve immediately

Notes

Grape syrup can be made ahead of time, and kept in the fridge for up to two weeks. Makes about 1/2 cup syrup.
