Mince Pie Christmas Mimosas

These Mince Pie Christmas Mimosas are the perfect holiday cocktail to enjoy on Christmas morning! They’re made with a mince pie flavoured syrup, fresh clementine juice, and champagne.

To make the mince pie syrup:

  1. Put all the syrup ingredients, except the bourbon, in a small sauce pan, stir to combine, and bring to a boil on a medium heat. Turn down to a simmer, and simmer for 10 minutes. Remove from the heat and stir in the bourbon, if using. Leave to cool completely and then strain through a fine mesh sieve. Store in the fridge. 

To make the mimosa:

  1. Combine the cinnamon and sugar and spread out on a shallow plate. Run clementine wedge (perhaps cut from your juiced clementines) around the rim of your champagne flute, and dip in the sugar mix. 
  2. Pour 1 oz of mince pie syrup in your flute, add the 2.5 oz of clementine juice, and top up with champagne. 


The mince pie syrup recipe makes about 1/2 cup (120ml) of syrup, store any left overs in a sealed bottle or jar in the fridge, will keep for about a month.
