As a food blogger, and a woman, I am so grateful to have these wonderful ladies in my life to support me and and lift me up (in both blog life and the rest of my life) – I honestly couldn’t do this blogging thing without them! So, when one of our own brings a new life into the world, we have to celebrate together!

Raspberry Peach Champagne Cocktail – A Mother’s Day Cocktail

Peach vodka, fresh raspberry syrup and champagne are combined to make this gorgeous Mother’s Day Raspberry Peach Champagne Cocktail. Sweet, bubbly and full of fresh, fruity flavours, this is the perfect cocktail to serve at a Mother’s Day brunch or any special occasion. Don’t have peach vodka to hand? No problem, I have an easy substitute for you! So raise a glass and let’s call a toast the wonderful Mother figures in our lives.

When I asked my mum what she wanted me to make for Mother’s Day her first answer was shortbread (I’ll be sharing how I obliged with that request very soon) and the second was a cocktail. As my chief taste tester, she’s always very happy when I put mixologist hat on – I mean, who doesn’t love testing new cocktail creations? For her Mother’s Day cocktail I knew I wanted some bright, spring flavours and colours, along with some bubbly – because what’s a celebration without bubbly? Our usual go-to bubbly is Prosecco, because it’s delicious and you don’t have to spend a fortune to get a decent bottle. I went with champagne for this Mother’s Day Raspberry Peach Champagne Cocktail however, because I wanted it to be extra special. However, if like me, your champagne tastes are pretty pricey, you can always substitute with Cava – Champagne’s Spanish cousin, you can get a nice tasting bottle (in my humble, non-sommelier, opinion) for much cheaper than a bottle of champers!

Cucumber Mint French 75 (aka Diamond Gin Fizz)

Wonderfully refreshing homemade cucumber gin, shaken with with fresh mint and lime juice, topped up with Prosecco or Champagne. This Cucumber Mint French 75, which is also known as a Diamond Gin Fizz, is so delicious and so refreshing, it’s the perfect cocktail for summer. Serve it at a BBQ or pool party, or sip on it in the garden while enjoying those warm summer nights (tell me more, tell me more). The homemade cucumber gin is so easy to make and absolutely divine.

Summer is just around the corner, I can taste it – or that might be this Cucumber Mint French 75 cocktail! I love cocktails any time of the year, but for some reason I really associate them with summer, perhaps that’s because most cocktails lend themselves well to pool side sipping while you soak up the sun – this unique twist on the French 75 cocktail certainly does, that’s for sure. A classic French 75 cocktail is made up of gin, lime or lemon juice and simple syrup, which is then topped up with champagne or another sparkling wine, served in a sours glass. It’s also known as a Diamond Gin Fizz, because it’s very similar to your standard gin fizz but you use champers instead of soda water.
