I love milkshakes, it’s basically like drinking ice cream what could be better than that? Well, maybe if you put some booze in them like these caramelised peach milkshakes with southern comfort!

I don’t know if you know much about Georgia, but it is called the peach state for a reason and I couldn’t spend the summer there without making something with peaches at least once! I really did leave it until the last minute but it’s okay, it was worth the wait. Whenever I drive past Chick-Fil-A and they’re advertising their peach shakes I get so tempted, there are few things that sound more appetising to me! But I can’t eat at Chick-Fil-A because my conscience won’t let me, so when I was trying to decide what to make with peaches my mind immediately went to milkshakes! There’s also a place in Atlanta called Grindhouse Killer Burgers and they sell boozy milkshakes which are amazing, so this milkshake is really inspired by Atlanta! I chose Southern Comfort because a) I bought two litres in duty free over a year ago and still haven’t drank all of them (I love Southern Comfort, but I don’t drink very often at home and when I do it’s usually beer) and b) the combination with peaches just sounded too good not to try! It may not be from Atlanta, but it’s still nice and southern!

The peaches are caramelised in butter and brown sugar, giving them a wonderful warm and slightly nutty flavoured – they’re then combined with vanilla bean ice cream and southern comfort to make a really simply but amazingly delicious milkshake for adults! Of course if you don’t drink you can omit the southern comfort and it’ll still be an amazing milkshake. You want the ice cream to be as cold as you can get it to make the milkshake nice and thick – if you prefer your milkshakes on the thinner side you just add more milk!

This recipe makes enough for 4 good sized milkshakes or, if you’re a dingus like me, only 2! I had a bit of an accident with the blender – it wasn’t the stereotypical forgot to put the lid on blunder, it’s even more stupid that that! After it was all blended and I’d poured two glasses I noticed it was leaking at the bottom a little and realised the blades in the blender jug probably weren’t screwed in tight enough so, of course, I went to tighten them. But I guess my brain forgot the righty tighty rule and I turned the bottom the wrong way – milkshake everywhere! It had all just poured out the bottom all over the sink, counter top and all up my arm before I even realised what was happening! I was too covered in milkshake to get a photo of the mess, sorry Lori I know you would have appreciated it! I’m just glad I had already poured some into glasses beforehand so I didn’t lose it all!

Starting next week my Fiesta Friday offerings will have an extra theme attached to them! If you live in the UK then you know that The Great British Bake Off is back! I’m very excited about it, I love watching it and I’m always tempted to enter (I don’t think I could handle the pressure though). For those of you that don’t know what GBBO is it’s a baking competition where 12 amateur bakers compete each week with three challenges – a signature dish, a technical challenge (which they don’t know what it is until the day, so no time to practice or research) and a showstopper – all within that week’s theme. One person is eliminated each week until there is one winner! And this year I’ve decided to bake along with it! I won’t be doing three bakes every week because I don’t have the time or money for that, but each week I’ll bake something that fits in with the week’s theme and then post the results the following week. The first episode was yesterday and the theme was cake, so next week I’ll be posting the cake I decide to make (I’ll be a week behind, it gives me time to come up with a recipe, bake it and post it) , I’ll bring it along to FF and you guys can feel free to judge me (be kind, my ego is easily bruised haha). Boozy Peach Milkshakes
Yields 4
A caramelised peach milkshake with southern comfort

Ingredients
  1. 4 firm peaches, pit removed and cut into quarters (you can leave the skin on)
  2. 2 tbsp unsalted butter
  3. 1/4 cup light brown sugar
  4. 4 generous cups of vanilla bean ice cream
  5. 2 tbsp whole milk
  6. 1 tsp vanilla extract
  7. 1/4 cup southern comfort
Instructions
  1. Melt the butter in a saucepan on medium high heat
  2. Add the peaches and sugar and stir all together, heat on medium high for 8 minutes, stirring occasionally, until peaches are softened, caramelised and slightly browned.
  3. Transfer the peaches and all the juice in the pan into a bowl and leave to cool completely, if they're at all warm you'll melt the ice cream
  4. Put the southern comfort, milk, ice cream, vanilla and peaches into a blender and blend until smooth. Add more milk a couple tbsp at a time if you desire a thinner consistency
  5. Pour into glasses and serve immediately
Notes
  1. Just omit southern comfort if you'd like them alcohol free, adding more milk at the end if necessary to make it thinner

Unfortunately I have bad memories of Southern Comfort from my early days of going out on the town… but I’m sure there are a number of other beautiful boozy alternatives out there too!       Thanks Margot! I think we all have those drinks we can no longer have due to over indulging in our younger days haha! Mine is tequila, I can still drink that in cocktails but I stopped being able to drink it by itself – although I’m long past the days of any kind of shots now anyway haha
      But yes, this would be great with a lot of other liquors, I had originally planned to do it with bourbon but went with soco when i realised i had so much of it in the house and it just sounded good to me! Happy FF hun 😀
